It seems love is in the air this week, so I’m coming at you with a very special edition of Single Dinner Series.
What better opportunity to reflect back on one’s love life than on Valentine’s Day.
Valentine’s Day brings up mixed emotions for me because frankly, I love love.
Sometimes it loves me back, but others…not so much.
Being open to love means being open to lots of heartache.
It can also mean lots of laughter, joy, madness, suffering, elation, and depletion – most often in that order.
It’s one of the sweetest things in life.
So until I get to taste the sweet/saltyness of love again, I’ll have these cookies instead.
Homemade Heartbreak Cookie Dough
Ingredients:
- 1 cup, packed, Brown Sugar
- 1 stick softened Vegetable Butter
- 1 tsp Vanilla Extract
- 1 large Egg
- 2 cups All Purpose Flour
- 1 tbsp Cornstarch
- 1/2 tsp Baking Soda
- 1 tsp Salt
- Optional ingredients* Chocolate chips, M&M’s, potato chips, pretzels, those sprinkles in the back of your cabinet (please do double-check that they are in fact sprinkles).
This recipe will yield 9 large oversized, super single cookies or 12, 2′ cookies.
- Combine softened butter and brown sugar into a nonstick mixing bowl.
- Add vanilla extract and an egg to brown sugar and butter mixture.
- Add AP flour, cornstarch, baking soda and salt to a separate bowl.
- In two parts, sift dry ingredients into the mixing bowl. Wisk to combine.
- Add optional ingredients, measure with all your heart.
- Once combined, place mixing bowl in fridge for 20 minutes.
- Preheat oven to 350 degrees Fahrenheit.
- Roll cookies into balls and bake at 350 degrees for 15 minutes.
