Friday Night Focaccia

Welcome back Gallivanters!

Today, I wanted to share a fun, savory new recipe perfect for those Friday nights in.

This simple focaccia recipe is also great to have in your back pocket to make for the upcoming Friendsgiving dinners and Christmas celebrations!

So without further ado: Friday Night Focaccia.

Ingredients: 

Optional ingredients: cranberries, bell peppers, onions, edible flowers, etc. for toppings/decoration.

Yield: 4 servings, or 2 slices of focaccia per person

Instructions:

  1. Combine flour, yeast and 1 tsp salt into bowl.
  2. Heat 1 cup of water for 1 minute in microwave or until lukewarm.
  3. Combine dry ingredients with lukewarm water until dough forms.
  4. Drizzle formed dough with 1 tbsp olive oil, cover formed dough with tea towel and place in refrigerator overnight, or from 6-8 hours to proof.
  5. After proofing overnight, prepare an 8” x 8” baking dish with olive oil, place dough in baking dish.
  6. Preheat oven to 400 degrees Fahrenheit.
  7. After washing your hands, spread dough across baking dish by kneeding fingertips into dough, to make “pockets” in the dough.
  8. Drizzle the top of the dough with the rest of the olive oil and sprinkle the rest of the salt onto the dough.
  9. Finely chop 2 sprigs of rosemary and sprinkle onto the dough.
  10. Optional: add a full sprig of rosemary and sliced cranberries into dough to look like a Christmas tree, as shown above. You can also add sliced onion, bell peppers, and edible flowers to create designs in the bread.
  11. Bake bread at 400 degrees for 30 minutes.
  12. Enjoy!
