If you remember my Dining in Disney post, you know that I ate my way through all the parks and had the best time doing it.
One of the meals I didn’t mention was the Be Our Guest Dinner themed for Beauty and The Beast in Magic Kingdom.
I didn’t know it then, but I haven’t stopped thinking about the french onion soup I had there for dinner!
So today, I’m bringing some of the magic home and recreated the soup as best as I could.
So let’s jump into my recipe for french onion soup!
French Onion Soup
Ingredients:
- 2 tbsp butter
- 1 yellow onion, julienned
- 1, 6 oz block Gruyere cheese
- 1, 32 oz beef broth
- 1 baguette
- salt and pepper, to taste
- garlic powder, 2 tsp
Tip: For the baguette, try my other recipe The not so not French Baguette.
- In a large skillet on low heat, add 1 tbsp of butter and heat until melted. Then, add the julienned onions to the skillet and then place lid onto skillet. (Caramelizing onions takes about an hour, but keeping the lid on helps trap moisture and cook them faster. Take care not to burn the onions but slowly cook over low heat and stirring at least every 10-15 minutes).
- While onions are caramelizing, shred gruyere cheese into a separate measuring bowl.
- In a large pot over medium heat, add 1 tbsp of butter until melted.
- Add caramelized onions, beef broth, salt, pepper and garlic powder to a low boil.
- While our soup comes to a boil, cut your baguette into slices about 1/4 inch thick and place onto a baking sheet, spreading them out until they cover the surface evenly.
- At 350 degrees Fahrenheit, place baguettes into the oven until crispy (about 5-7 minutes).
- Dish a portion of the soup into a ramekin, place 2-3 baguette slices on top of soup.
- Top the soup with shredded cheese, enough to cover the baguette slices and place in oven set to broil for 2-3 minutes.
- Enjoy!
