Welcome Gallivanters!
I am already ready for Thanksgiving leftovers next week.
But I’ve reached the age where I’m expected to contribute a dish…and I haven’t quite mastered the big three (turkey, stuffing, mac n cheese). Argue in the comments.
So this year I thought I’d start off by bringing a dessert!
Here is a quick and easy recipe that will wow your family at Thanksgiving.
Without further ado, Chocolate Cream Pie.
Chocolate Cream Pie
Ingredients:
- 1 pre-baked graham cracker pie crust
- 3/4 cup white sugar
- 5 TBSP cocoa powder
- 3 TBSP Cornstarch
- 1/4 tsp salt
- 2 cups Heavy Whipping Cream
- 4 egg yolks
- 1 tsp vanilla extract
- For the meringue:
- 4 egg whites
- 1/4 tsp cream of tartar
- 1/2 cup white sugar
This recipe will yield 1 pie (6-8 slices)
- Combine cornstarch, cocoa powder, sugar and salt in a nonstick mixing bowl.
- In a sauce pan, add heavy whipping cream and bring to medium heat.
- Add dry ingredients to heavy whipping cream, be sure to sift flour to prevent clumps.
- After whisking egg yolks in a separate bowl, slowly incorporate to chocolate milk mixture, make sure to turn down the heat to medium/low as to not cook the eggs too quickly. Continue to whisk as the are incorporated
- Place mixture on low, adding vanilla extract.
- Pour completed mixture into pre-baked pie crust to cool.
- In a stand mixer, beat egg whites and cream of tartar until foamy, then slowing incorporate the remaining sugar and beat together until stiff peaks form.
- After scooping meringue onto the pie, bake at 350 for 13-15 minutes or until meringue starts to brown.
- Enjoy!
Well folks, I hope you’ve enjoyed today’s blog post!
I think your family’s will be impressed with your new found baking skills.
If not, next year store bought is fine.
